Make Something Monday: Stuffed Tomatoes

Stuffed tomatoes are one of my favorite foods. Not only are they easy to make, but they also make a beautiful presentation for parties and they are DELICIOUS! These are stuffed with a rice, bacon, mayo, and parsley mixture. Sorry for the terrible picture--I made stuffed tomatoes recently and forgot to take a picture so I had to find one from a while back.

I love stuffed tomatoes too! I can't wait until the garden starts producing tomatoes! I like them cooked or made to be served cold!

It's times like these that I hate my shady yard!
We CANNOT grow tomatoes here. We live in a wooded area.....that lets zero sunshine come through.
Bummer!

I use chicken salad (or tuna) to stuff my tomatoes...but those sound really good too!
