Ain't No Shame In Using a Mix! Strawberry Cupcakes with Cream Cheese Frosting {Recipe}

I have no shame in using boxed cake mixes to make a quick, last minute treat. This weekend, the boys were craving something sweet so I used a strawberry cake mix to make some yummy cupcakes. The key to using a boxed cake mix is to make your own frosting. Store bought frosting is way too sweet and definitely tastes "store bought". Plus, frosting is so easy to make--especially this delicious cream cheese frosting!

Ingredients:
2 (8 ounce) packages cream cheese, softened
1/2 cup butter, softened
2 cups sifted confectioners' sugar
1 teaspoon vanilla extract
Zest of one lemon {optional, but so good!}

Directions:
In a medium bowl, beat together the cream cheese and butter until creamy. Add the vanilla and lemon zest, then gradually stir in the confectioners' sugar.

    Definitely no shame in making anything from a mix! And my husband loves my frosting! I think it's super sweet compared to store bought though. LOL!

    Thanks for this post! I always use a boxed mix for my cupcakes and I've been wanting to make my own frosting. I tried making cupcakes from scratch but I really stink at it. lol

    MMMM, these looke so good. I bet if you squirted the frosting into the middle of the cupcakes it would be REALLY good.
    I love your baking recipes. I'll have to try this simple frosting recipe, because like you, I don't like the store bought ones, but will use a box for the cake and doctor those up with flavorings or add my own little touches.
