Warm Up Those Cold, Autumn Nights with Some Hearty Beef Stew! {Recipe}

It is definitely getting chilly here in Georgia so the other night we warmed up with the perfect Fall dinner--beef stew! Served with some bread hot out of the oven, this dinner is hearty, healthy, and delicious. Even the kids will love it!
Ingredients:
1-2 tablespoons olive oil
1 1/2 pounds stewing beef {cut into bite sized pieces}
1/2 cup chopped onion
1/2 cup sliced celery
3 cups beef broth
2 carrots
2 medium potatoes
1 cup apple juice
1/2 cup frozen corn kernels
salt and pepper, to taste
2 tablespoons flour
2 tablespoons cold water
Directions:
In a large Dutch oven or pot, brown the beef on medium-high heat in the olive oil; add the onion and celery and sauté for 3 to 5 minutes longer. Add beef broth and bring to a boil. Reduce heat to low, cover, and simmer for 1.5 to 2 hours. Add the carrots, potatoes, and apple juice; simmer for about 30 to 40 minute longer, or until vegetables are tender. Add corn and continue cooking for 5 to 10 minutes. In a small bowl or cup, combine flour with cold water until smooth. Add the mixture to the simmering broth until stew is thickened. Taste and add salt and pepper.
Serves 4 to 6.

How funny! I actually have Beef Stew simmering in my crockpot right now. It's one of my favorite fall dishes to make! My version is only slightly different from yours... and I have to make a ton since there are 7 of us eating it. :)

This looks really yummy! I have never seen it made with apple juice, but I bet that gives it a wonderful flavor. Thanks for sharing. As soon as the temperature drops here (TeeHee) I'll be making some of that for sure. Sorry to rub it in ladies, but we have the BEST weather right now.

I just took pictures of my beef stew for our blog, but I am totally going to have to try this recipe. The apple juice is a really intriguing ingredient. YUM!!
