Up until recently, I had only eaten creamed corn a couple of times in my lifetime--always out of a can and it always disappointed me. As much as I love to cook, I had never thought of making my own creamed corn. Not sure why really. Anyhow, Mike loves creamed corn so for Christmas, I decided to make our own. Homemade creamed corn is so good. Everyone raved about it! Not to mention that it is super easy and quick to make! There really is no reason to eat it out of a can anymore--just try it and see! {By the way, I apologize for the terrible picture! It was Christmas Eve and everyone was telling me to stop taking pictures of the food so they could eat LOL.}


Ingredients
2 boxes (20 ounces) frozen corn kernels or of course you can use fresh
1/2 cup whole or 2% milk
1 package of cream cheese, cut into small pieces
4 tablespoons minced green onions or chives
Kosher salt and freshly ground pepper to taste.

Directions
In a small pot, simmer corn and milk over medium heat until corn is just tender. You want the corn to still be a little bit firm or "al dente". It will take about 5 to 10 minutes. Add cream cheese and stir to combine. Add more milk if needed to get the consistency you like. Season with salt and pepper to taste. Remove from heat and top with green onions or chives.
