If you are searching for a low calorie, low carb, and healthy way to enjoy pasta dishes, try spaghetti squash instead of traditional pasta. It is so delicious and healthy for you and makes an excellent substitute for pasta. The key is cooking it right.
Here's how you do it. Cut your spaghetti squash in half. Scoop out the seeds. Drizzle the cavity with some olive oil, kosher salt, and pepper. Roast it in a 400 degree oven, skin side down for 30 to 45 minutes or until you can pierce the squash with a knife but it is still firm. This is the key--you want the squash a little firm--not mushy. When the squash is done, scoop out the insides with a fork. You will want to use the fork almost like a rake on the inside of the squash. The squash will be stringy and look like "pasta". At this point, I like to add some butter and salt to taste. Top as you would traditional pasta. You can use white sauces like alfredo or go for a faux"spaghetti" and use marinara.

We also LOVE spaghetti squash, although DH could do without it. It's super good with just a bit of parmesan sprinkled on it too!

Oh my goodness, thank you SO much for posting this! We just tried it tonight and it was SO easy and so yummy! I'm trying to lose my baby weight and it was so nice to be able to have a dinner that tasted just like a spaghetti dinner, but that was low fat/calories, everything!
