Blueberry Muffins & Jam Muffins Made Using Cereal {Recipe}
Last year, I hosted a breakfast for my local friends sponsored by Kellogg's. I baked several items using Kellogg cereals and they were all a huge hit. We all especially loved the muffins--the All Bran Blueberry Muffins and the Bran Jam Muffins. They were delicious! Not too sweet. Moist. Really, really tasty. Everyone at the party asked for the recipes and I totally meant to share them with you too. So...here they are...albeit a little bit late. Enjoy!
Blueberry Lover's Muffins Original
Preparation Time: 15 minutes
Total Time: 40 minutes
Servings: 12
Ingredients
2 cups all-purpose flour
4 teaspoons baking powder
1/4 teaspoon salt
1 1/2 teaspoons cinnamon
1/3 cup sugar
3 1/2 cups Ready-To-Eat Cereal All-Bran® Complete® Wheat Flakes
1 3/4 cups fat-free milk
2 egg whites
3 tablespoons vegetable oil
1 1/2 cups fresh or frozen blueberries unthawed
Directions
1. Stir together flour, baking powder, salt, cinnamon, and sugar. Set aside.
2. Measure KELLOGG'S COMPLETE Wheat Flakes cereal and milk into large mixing
bowl. Stir to combine. Let stand 2 minutes or until cereal is softened. Add egg
whites and oil. Beat well. Add flour mixture, stirring only until combined.
Gently stir in blueberries. Spoon batter evenly into twelve 2 1/2-inch
muffin-pan cups coated with cooking spray.
3. Bake at 400° F about 23 minutes or until light golden brown. Serve warm.
Bran Jam Muffins
Preparation Time: 10 minutes
Total Time: 30 minutes
Servings: 12
Ingredients
1 1/3 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/3 cup butter or margarine, softened
1/3 cup sugar
1 egg
1 cup Raisin Bran
1/2 cup milk soured with 1 teaspoon lemon juice
1/2 cup strawberry jam
Directions
1. Stir together flour, soda, salt, cinnamon and nutmeg. Set aside.
2. In large-size mixing bowl beat butter and sugar until light and fluffy. Add
egg; beat well. Mix in cereal. Add dry ingredients alternately with milk; beat
well after each addition. Gently fold jam into batter. Do not beat. Portion
batter evenly into paper-lined 2 1/2-inch muffin-pan cups.
3. Bake at 400° F about 20 minutes or until tests done. Serve warm.
