Ain’t No Shame In Using a Mix! Strawberry Cupcakes with Cream Cheese Frosting {Recipe}

I have no shame in using boxed cake mixes to make a quick, last minute treat. This weekend, the boys were craving something sweet so I used a strawberry cake mix to make some yummy cupcakes. The key to using a boxed cake mix is to make your own frosting. Store bought frosting is way too sweet and definitely tastes “store bought”. Plus, frosting is so easy to make–especially this delicious cream cheese frosting!

Ingredients:
2 (8 ounce) packages cream cheese, softened
1/2 cup butter, softened
2 cups sifted confectioners’ sugar
1 teaspoon vanilla extract
Zest of one lemon {optional, but so good!}

Directions:
In a medium bowl, beat together the cream cheese and butter until creamy. Add the vanilla and lemon zest, then gradually stir in the confectioners’ sugar.
