Easy, Homemade Guacamole Recipe

Football season is here and my husband, Mike typically has friends or family over on Sundays to watch the Atlanta Falcons game with him and Lucas. One thing to note about football fans…they are a hungry bunch! That’s why I’m always looking for simple and yummy snacks to quickly pull together on game day. One of our favorites is homemade guacamole. This is one of those homemade dishes that is WAY better than anything you can buy at the store. Homemade guac tastes so fresh and bright. Plus, it is super simple to make with just a few ingredients. Recipe is below but after a few times of making this dish – you will be able to eye ball all the ingredients and go by flavor alone!

Homemade Guacamole Recipe

Ingredients

  • 3 large Hass avocados, peeled, pitted and coarsely mashed (I like mine to still have avocado chunks, but if you prefer creamier consistency then mash some more)
  • 2-3 Tbsp cilantro, chopped
  • 1 medium tomato, diced
  • 1 large clove garlic, minced
  • 1 lime, juiced
  • 1/2 cup red onion, diced
  • 1 tsp Kosher salt

Directions

Combine avocado, salt, garlic, and lime juice in a large bowl and stir. Mix in cilantro, tomato, and red onion. Serve with tortilla chips and ENJOY!

Father’s Day Gift Ideas for the Grilling Dad + Homemade Kansas Style BBQ Sauce

Both my husband, Mike and my dad are kings of the grill. They love spending time cooking outdoors for the family during the warm spring and summer months. So for Father’s Day, I always know what to get those two. BBQ anything. This year, I will be whipping up a homemade BBQ sauce to give the special dads in my life. Today, I’m sharing one of our favorite BBQ sauce recipes that is super simple to make and so much better than store-bought!

Homemade BBQ Sauce Recipe

Homemade Kansas Style BBQ Sauce

Ingredients

  • 1 1/3 cups tomato sauce
  • 1/3 cup tomato paste
  • 1/3 cup honey
  • 1/2 cup + 3 Tbsp red wine vinegar
  • 1/4 cup unsulfured molasses
  • 2 tsp natural hickory liquid smoke
  • 1/2 tsp cayenne pepper
  • 1/2 tsp Kosher salt
  • 1/2 tsp freshly ground pepper
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/8 tsp ground cinnamon

Directions: Mix all of the ingredients together into a medium saucepan and bring to a boil. Reduce heat to low and simmer for 20-30 minutes. Make sure to stir the sauce every few minutes. Take off the heat and allow to come to room temperature and store in refrigerator until ready to use.

I like to package the BBQ Sauce in a nice personalized mason jar that can be reused in the future. Plus, I like to add a little something dad can use with his yummy BBQ sauce.

Super Bowl Food: 7-Layer Dip Recipe

The big game is this weekend and we are making last-minute plans for a small get-together at our house. Honestly, our week has been busy, busy (as always!), which has made it very difficult to plan a big menu. The idea is to prepare a few tasty dishes that our friends and family will love but are also very easy and quick to make. One of our favorites is 7-Layer Dip. This dip never lasts. You put the dip on the table and I swear everyone makes a mad dash for it and then loiters around the dish until every last bite is gone! As the name implies the dip consists of 7 layers – refried beans, sour cream, guacamole, tomatoes, cilantro, cheese, and black olives.

It’s super simple to make especially when you use Kroger’s NEW PeakFection™ guacamole and salsa (allows you to skip making the fresh guac and dicing tomatoes). However, both the PeakFection™ guacamole and salsa taste like they are made fresh due to their special cold water, high-pressure processing technology that holds PeakFection at the peak of perfection, so it stays fresh a whole lot longer. These are great to have stashed in the refrigerator!

  • Ingredients
    1 container Kroger’s NEW PeakFection™ guacamole
    Kroger’s NEW PeakFection™ salsa (drained)
    1 (8 ounce) container sour cream
    1 (1 ounce) package taco seasoning mix
    1/4 bunch cilantro, finely chopped
    1 (16 ounce) can refried beans
    2 cups shredded Mexican-style cheese
    1 (2.25 ounce) can black olives – drained and finely chopped

Directions
In a small bowl, mix together the sour cream and taco seasoning. In a 9×13 inch dish, spread the refried beans. Top with sour cream mixture. Spread on guacamole. Top with salsa, shredded cheese, black olives, and cilantro. Serve with tortilla chips.

We are so excited about the next few weeks – Christmas Eve, Christmas Day, and New Years Eve. It’s time to celebrate! We go to my parent’s Christmas Eve party on the 24th and do Christmas Day at home with just us and the kids. However, we have one more party left to host – New Year’s Eve. Honestly after hosting so many parties towards the end of the year, we like to keep New Year’s Eve simple and relaxed.

One of the appetizers that we will be serving this year is a Blue Cheese Artichoke Dip. This is a hot dip which makes it very satisfying and a perfect option when you won’t have a main course. Prep is done in just minutes and people LOVE it.

Ingredients

  • 1 can (14 oz.) artichoke hearts, drained
  • 1 cup mayonnaise
  • 1 pkg. (8 oz.) brick cream cheese, softened
  • 1/2 cup crumbled blue cheese
  • 1/2 cup shredded Parmesan cheese
  • 4 green onions, sliced
  • WHEAT THINS or TRISCUITS 

Instructions

  1. PREHEAT oven 350°F. Place all ingredients in food processor container; cover. Process just until blended, but not completely smooth.
  2. SPOON into 9-inch pie plate.
  3. BAKE 20 to 25 minutes or until lightly browned. Let stand 5 to 10 minutes before serving. Serve with WHEAT THINS’

Quick Crowd-Pleasing Thanksgiving Appetizer: Apple Pie Dip Recipe

I’m a big believer in appetizers being simple and quick to prepare – especially on Thanksgiving when I am already spending several days before cooking and cleaning and getting everything just right in preparation for the big day. You guys. This dip is FALL on a plate. It is creamy and filled with apples and pecans and spices. The melted cheddar cheese on top makes it a little bit sweet/salty. And…it is served warm.

Ingredients

  • 1 tub (8 oz.) reduced-fat cream cheese spread
  • 2 Tbsp. brown sugar
  • 1/2 tsp. pumpkin pie spice
  • 1 apple, chopped, divided
  • 1/4 cup shredded reduced-fat cheddar cheese
  • 1 Tbsp. finely chopped pecans
  •  WHEAT THINS Original Snacks and/or TRISCUITS

Instructions

  • HEAT  oven to 375°F.
  • MIX  cream cheese, sugar and spice in medium bowl until well blended. Stir in half the apples.
  • SPREAD  into pie plate or small casserole dish; top with remaining apples, cheddar and nuts.
  • BAKE  10 to 12 min. or until heated through. Serve with WHEAT THINS and/or TRISCUITS.
  • OPTIONAL: Top with extra chopped nuts and apples for garnish.

Spinach Parmesan Dip

Ingredients

  • 1 10-ounce package frozen chopped spinach, thawed
  • 1 cup sour cream or yogurt
  • 1/4 cup grated Parmesan
  • 1 clove garlic, finely chopped
  • kosher salt and black pepper

Directions
1. Squeeze all excess liquid out of the spinach.
2. In a medium bowl, combine the spinach, sour cream, Parmesan, garlic, and salt and pepper to taste.

My favorite thing about both Tostitos Scoops! and Lays Classic Potato Chips is the ingredients list. It is short. Very short. And, I can pronounce ALL of the ingredients.

Thanksgiving Dinner: Easy Homemade Cranberry Sauce Recipe

 

For years, I have fought with Mike about making cranberry sauce from scratch. He insisted that he liked the “tradition” – the cranberry sauce out of the can. I insisted that we could do better! Finally, last year – I totally changed his mind by just going for it and making cranberry sauce from scratch. He is now a convert and says he will never go back to canned cranberry sauce. Honestly, making fresh cranberry sauce is so easy – it truly takes about as much effort as opening a can. Try it – you will never go back either – promise!

 

Homemade Cranberry Sauce

Ingredients

  • 12 ounces cranberries
  • 1 cup white sugar
  • 3/4 cup orange juice
  • Zest of one orange

 

Directions

In a medium sized saucepan over medium heat, dissolve the sugar in the orange juice. Stir in the cranberries and cook until the cranberries pop and a lot of the liquid has reduced  – about 15 minutes. Remove from heat and place sauce in a bowl. Cranberry sauce will thicken as it cools.

Fiesta Seven Layer Dip


INGREDIENTS
1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained, liquid reserved
1 can (16 oz each) Rosarita® Traditional Refried Beans
1 container (12 oz each) refrigerated guacamole
1 container (16 oz each) sour cream
1 pkg (1.25 oz each) taco seasoning mix
1 cup shredded Cheddar and Monterey Jack cheese blend
1 can (2.25 oz each) sliced ripe olives, drained
1/4 cup sliced green onions
Tortilla chips, optional

DIRECTIONS

Reserve 1/2 cup drained tomatoes; set aside. Blend remaining tomatoes and reserved liquid with beans in medium bowl.
Spread bean mixture in 8×8-inch glass baking dish or round casserole dish. Top with guacamole.
Blend together sour cream and seasoning mix in small bowl. Spread over guacamole. Top evenly with layers of cheese, olives, green onions and reserved tomatoes. Chill 2 hours prior to serving. Serve with tortilla chips, if desired.

Healthy Chocolate Fondue Recipe Kids Will Love & Parents Can Feel Good About! {Guest Post}

My 2 year old twin boys love any foods that requires dipping. The usual like chips and salsa, carrots and ranch, chicken dipped into ketchup; it doesn’t matter, they just can’t get enough. So in efforts to provide a slightly healthier and fun way to get them to eat their fruits and veggies, I made a Chocolate Fondue with a few secret ingredients; avocados and carrots.

I know you thinking, this chic is crazy that sounds disgusting. But please believe me when I say you can’t taste them, all you get is a wonderful chocolaty dipping sauce.

Now please bare with me there are a couple steps to this process, but once you’ve made it, and feed your hungry crowd chocolate you won’t feel the slightest bit guilty.

Let me walk you through the process.

You will need: 1 Tablespoon butter, 1/2 cup avocado puree, 1/4 cup carrot puree, 1 cup powdered sugar, 1/2 cup unsweetened cocoa powder, 1 tsp vanilla extract, and a variety of fresh fruits.

The first step is preparing the puree’s. In a microwavable lidded dish add carrots with a splash of water. Cook them until tender, about 5 minutes.

then pureed them in a food processor or blender adding a little water if needed for a smoother consistency.

I made more than I needed, so I put the leftovers in ice trays to freeze, and save to make this again, or to make carrot cake.

The avocado’s, just peel, de seed and puree in a food processor or blender and set aside.

If you make more than needed like I did, add a little salt, maybe some chopped tomato (or salsa) and have guacamole dip.

To make the fondue, melt 1 tablespoon of butter in a medium sized saucepan over low heat.

Then add in the pureed avacodo

powdered sugar

cocoa

and vanilla.

Whisk until all the ingredients are incorporated.

That’s it, ready to eat. And best served warm.

I served with apples slices, graham crackers, and strawberries.
