For the past week, I’ve been sharing some of our favorite easy-to-make breakfast ideas. Today, I want to share a quicker way to enjoy pancakes with a Baked Apple Pancake.

Instead of flipping each individual pancake, this is one large pancake that is baked in a pie plate.

To save time in the morning, I put all of the wet ingredients into the blender and all of the dry ingredients into a zip top bag the night before. This way everything is pre-measured and all I have to do in the morning is add the dry ingredients to the blender. Give it a whirl for about 30 seconds and pour into the pie plate. It bakes for about 20 minutes while I get the kids ready for school and by the time we’re ready so is the pancake! Top with fresh berries, maple syrup and a sprinkle of powdered sugar OR you if you have time over the weekend – make the apple topping in the recipe below. Delicious!!

Baked Pancake with Fruit Topping

Ingredients

  • 1 1/2 cups Rice Krispies
  • 1/2 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 eggs
  • 1 cup fat-free milk
  • 1 tablespoon vegetable oil
  • 1 teaspoon powdered sugar
  • 2 tablespoons butter

Apple Topping (optional)

  • 1/3 cup granulated sugar
  • 1 teaspoon cinnamon
  • 3 cups thinly sliced peeled tart apples
  • 1/4 cup water

Fresh Fruit Topping (optional)

  • 1/2 cup fresh raspberries
  • 1/2 cup fresh blueberries
  • Maple syrup

Directions
1. Place KELLOGG’S RICE KRISPIES cereal, flour, the 2 tablespoons granulated sugar, eggs, milk and oil into electric blender container. Process 15 seconds or until mixture is smooth.

2. Place glass 10-inch pie plate in 425° oven for 5 minutes. Carefully remove hot plate from oven. Quickly coat with cooking spray and pour cereal batter into hot plate. Return to oven and bake about 20 minutes or until golden brown and puffed around edges. Remove from oven and sift with powdered sugar. Cut and serve immediately with either Apple Topping or fresh berries and maple syrup.

3. OPTIONAL APPLE TOPPING: While pancake bakes, make Apple Topping by melting butter in 12-inch skillet. Add the 1/3 cup granulated sugar, cinnamon, apples and water. Simmer about 10 minutes or until apples are just tender, stirring occasionally. Remove from heat. Serve hot over hot pancake.

One of our favorite breakfasts on busy weekday mornings are muffins. They are such an easy thing to whip up once a week and you have several breakfasts and/or snacks for the entire week (or even longer depending on how big your family is). They are easy grab and go breakfast if you are in a rush. Kids and adults love them! But…you can pack all sorts of good for you things in a muffin…like these yummy Branana and Raisin Muffins!

These muffins are packed with flavor that comes from the ripe bananas and spices. They are really, really good! Plus, the addition of All-Bran gives them a punch of fiber.

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 cups Complete® Wheat Bran Flakes
  • 1/3 cup fat-free milk
  • 2/3 cup mashed fully ripe bananas
  • 2 egg whites
  • 1/4 cup butter, melted
  • 1/2 cup raisins

Directions
1. In medium mixing bowl, combine flour, baking powder, sugar, cinnamon and nutmeg. Set aside.

2. In large mixing bowl, KELLOGG’S COMPLETE Wheat Bran cereal, milk and bananas. Let stand 1-2 minutes or until cereal is softened.

3. In small mixing bowl, beat egg whites until foamy. Add egg whites and margarine to cereal mixture. Beat well.

4. Add flour mixtur and stir in raisins; stirring only until combined.
Portion batter evenly into twelve 2 1/2-inch muffin-pan cups coated with cooking spray.

5. Bake at 400° F for 25 minutes or until lightly browned.

Everyone loves the iconic and tasty Rice Krispies treats – myself included! However, they are treats and obviously not intended for breakfast. However, I have a discovered a healthy version of the Rice Krispies treat that you and your kids may actually like better and you’ll feel good about eating them for breakfast.

These Rice Krispies Fruit & Peanut Butter Breakfast Bars replace the marshmallow and butter with peanut butter, honey, and dried fruit. Paired with a cold glass of milk, it’s a perfectly delicious morning breakfast that can be eaten in the car or on-the-go!

You can even make these to pack for school lunches, healthy treats to take to school (replace the peanut butter with sun butter for peanut-free school zones), or just a yummy afternoon snack. WARNING! These are so good that you have to practice a lot of self-control when you’re in the same room with these lol. Mike and I may or may not have eaten several in one day.

Rice Krispies Fruit & Peanut Butter Breakfast Bars

Ingredients

  • 2/3 cup honey
  • 1/4 cup firmly packed brown sugar
  • 1/2 cup peanut butter
  • 1/4 cup raisins
  • 1/2 cup chopped dried fruit (I used cranberries)
  • 6 cups Rice Krispies

Directions:
1. In 4-quart saucepan, combine honey and sugar. Cook over medium heat, stirring constantly, until mixture begins to boil. Continue cooking and stirring 1 minute longer. Remove from heat.

2. Stir peanut butter, raisins and mixed fruit into hot mixture. Add KELLOGG’S RICE KRISPIES cereal and mix until cereal is coated. Press evenly into 13 x 9 x 2-inch pan coated with cooking spray. Cool. Cut into 2 1/4 x 1 1/2-inch bars. Store in airtight container in refrigerator.

Trust me on this. Please, please, please. Everyone and I mean everyone in my family – husband, 6 year old, baby, and myself included – love this dish. LOVE. It is super easy and super quick and perfect for those mornings when you just need something warm in your belly! (Oh and it also includes much-needed fiber that is lacking in many of our diets, but that will be our little secret!)

Did you know? Cereal is a convenient way to start the morning. Almost everyone can “make” a bowl of cereal. It’s a great way to get kids involved during family breakfasts.

Hot All-Bran Cereal with Bananas and Brown Sugar Recipe

Ingredients

  • 2/3 cup Kellogg’s® All-Bran® Original cereal
  • 2/3 cup skim milk
  • 1/4 tsp pure vanilla extract
  • 1-2 tsp brown sugar
  • Sliced banana

Directions

1. Place Kellogg’s® All-Bran® cereal and milk in microwave safe cereal bowl. Microwave on HIGH 1 minute or until mixture starts to boil. Serve with desired amount of vanilla, brown sugar, bananas and additional milk, if desired.

Not only is breakfast my favorite meal of the day, but as all moms know – it is the most important meal of the day for both adults and kids. To celebrate, I’m going to be featuring a new breakfast recipe every day. Hopefully, these breakfast ideas will help you give your family a great start! I like to make these with layers of creamy vanilla yogurt, fresh fruit, and my favorite Kellogg’s cereal for crunch.

Did you know? A serving of Kellogg cereals and 1 cup of skim milk can provide protein and four nutrients most people don’t get enough of: fiber, calcium, Vitamin D and potassium.

Make Ahead Yogurt Parfaits

To keep it quick in the morning, I put these together the night before by layering all of the components into small 8 ounce jelly or mason jars. In the morning, just grab your parfait and go! Kids love these. Adults love these. They are perfect for breakfast, a midday snack, healthy dessert, and I even pack these into Lucas’ lunchbox for school. So good!

Make Ahead Breakfast Yogurt Parfaits

What You’ll Need

  • Vanilla Yogurt
  • Fresh fruit (berries, bananas, etc)
  • Kellogg’s Rice Krispies, All Bran, or Special K Cereal for some crunch
  • 8 oz jelly or mason jars

Directions: Starting with the yogurt, layer all of the components into the jar. Screw on mason jar lid tightly and store in the refrigerator 1-2 days until ready to eat.
